Coffee whipped cream dessert with crunchy brittle

Luscious, crunchy, moreish and super easy to make! This coffee mousse is made by simply whipping up double cream mixed with strong Italian coffee. The combination of the two will simply knock your socks off! Coffee and cream are a match made in heaven.
Adding a sprinkle of crunchy brittle on top and a dash of liquor at the bottom of the glass will add a kick to this dessert making it more irresistible and just perfect to be served on the festivities ahead. You can make it in advance and store it in the fridge.
If you like you can add some chocolate chips when mixing the cream with the coffee or just a sprinkle of cocoa powder on top.

Ingredients
- fresh double cream - 250 ml - 8 fluid oz
- strong coffee - 200 ml - 7 fluid oz
- sugar - 2 tsp
- rum, brandy or other liquors of your choice - 4 tbsp
- For the brittle:
- toasted hazelnuts roughly chopped - 60 g - 1/3 cup
- lemon juice - 1 tbsp
- sugar - 60 g - 1/3 cup
- glasses for serving - 4
Instructions
Make the coffee, add two tsp of sugar and let it cool down.
First let's make the brittle: put the sugar and the lemon juice in a non-stick pan and let it caramelize until it looks golden in colour.
When the sugar begins to show the first signs of a boil, add the hazelnuts and stir thoroughly. Add the nuts a little at a time and mix well.
Pour the mixture on a sheet of parchment paper on a flat surface then place another sheet on top and with a rolling pin make it nice and flat.
Remove the paper and with a sharp knife cut the brittle into small pieces
Whip the cream until firm then add the cold coffee and mix well
Put some small pieces of brittle and 1 tbsp of liquor at the bottom of each glass. With a spoon or with the help of a piping bag pipe out the cream and fill up the glass
Finish off with some pieces of brittle and 2 or 3 coffee beans.
I love that crunchy brittle and the coffee flavoured cream sounds just amazing as well.
