Grandma’s easy soft crostata with jam

Would you like a very simple Italian recipe for tart? This one really reminds me of my nonna or grandma and it is ever so simple.
It is not the classic crostata recipe as it has a softer consistency which is due to the addition of yogurt. I made this tart in less than 20 minutes and it was really delicious. You don't need to add too much sugar to the pastry as the jam is already sweet enough.
This was divine in the morning for breakfast! What a sweet way to wake up.. together with a piping hot cup of coffee of course.

Ingredients
- plain flour - 320 g - 2 + 3/4 cup + extra to sprinkle
- brown sugar - 80 g - 3/8 cup
- baking powder - 2 tsp
- butter - 75 g - 1/3 cup
- egg - 1
- natural yogurt - 90 g - 1/3 cup
- vanilla essence - 1 tsp
- jam - 300 g - just over 7/8 cup
Instructions
In a bowl with a spoon mix the flour, the baking powder, the softened butter, the sugar, the vanilla, the yogurt and the egg. Use your hands to combine the ingredients and form a smooth ball.
Sprinkle some flour on your worktop. Using a rolling pin roll the pastry. You can add a little extra flour if the dough is quite sticky. Grease a 25 cm or 10 inch round baking tin with butter and use 3/4 of the pastry to line the mold. Spread the jam on top.
With the remaining pastry cut out some strips to create a lattice finish and place them on top of the jam.
Bake at 180C or 350F for about 25 to 30 minutes or until golden. Wait for the your tart to cool down before slicing it.

No I didn’t make the jam. It was a pretty good one though. I love berry jams in cakes and biscuits.

This recipe has reminded me of my mum’s individual jam tarts she would bake to take to the beach and on picnics. So simple and yet so delicious. I particularly like the idea of this pastry with the addition of yoghut to give a different texture. Must try, thanks.
This is a crostata a bit softer than the classic one. I found it so easy to make. It was actually the first time I tried adding yogurt to it and it worked very well. I am making another one today using a different type of jam.
