Grilled peaches with ice cream and berries

Cooking and baking? Yes but less in the summer please.

Recently we had a heatwave over here in the UK so switching the oven on was an impossible task. Even for a passionate cook.

Cold foods like salads, raw vegetables, mozzarella and prosciutto, lots of fruit and ice creams are definitely on the menu right now.

If you fancy something easy this summer try grilling some peaches on your griddle pan then top them with vanilla ice cream and a quick berry sauce you can make in minutes. Peaches are one of the most delicious and sweet fruit of summer. They make beautiful tarts too.

I could live just on fruit and ice creams right now.. especially Italian ice creams.

  • Prep Time : 17 minutes
  • Cook Time : 2 minutes
  • Yield : 4



Put the berries in a pan with the sugar and cook them over a gentle heat for about 15 minutes. Stir from time to time.

Wash and dry the peaches, slice them in half and remove the stone with a teaspoon.

Brush the pulp with a little butter. Heat up a griddle pan and then lay the peaches halves on it. Leave them there for a couple of minutes until you get those lovely griddle marks on top.

Put a scoop of ice cream onto each peach half and pour some berry sauce on top.

Serve immediately.

      Gosh. Over here we are not used to hot weather, at least not as hot as it has been recently!
