Halloween Stuffed Peppers

My house is full of pumpkins! I mean, full.

The best way I enjoy them is by roasting them in the oven for 20 minutes or so, so that they cook and caramelize a little. I find them addictive, to me it is no different than having a piece of cake!

As they are plentiful at this time of year, I am cooking pumpkin almost on a daily basis. From sweet to savoury you can turn them into delicious meals.

I love carving them for Halloween but this time I tried something different and I carved peppers instead.

I chose orange peppers, to resemble the colour of pumpkins and stuffed them with mince meat. You can stuff them with rice and vegetables, cheese and cos-cous, anything you like.

If you are entertaining this Halloween they will look cute and bring a smile to your guest and by the way ...they are delicious too!

  • Cook Time : 50 minutes



Cut the top of the peppers, wash them and remove all the seeds and filaments

Carve the peppers making the classic Halloween face

Mix the mince with the egg, 3 tbsp of breadcrumbs, salt and pepper, 2 tbsp of Parmesan cheese and the finely chopped parsley and garlic clove. Combine all the ingredients well


Stuff the peppers pressing the mince in. Sprinkle some Parmesan, then breadcrumbs and a little olive oil over the stuffing

Put the peppers in a the oven at 180C for about 50 minutes. Put the tops of the peppers over a kitchen foil and on a baking tray and bake them.

Serve the peppers with the tops on.

    I love Pumpkin season if for no other reason, roasted pumpkin sizzling in the oven smells incredible! As a matter of fact, tomorrow is Pumpkin Day here in the states!
