Salsa verde or green sauce is one of those classic sauces you can use almost everywhere: it goes heavenly on meat, fish, eggs or just on top of toasted bread as an appetizer.
You will find different recipes for this sauce. Some have capers and anchovies added and some have pinenuts too.
This version has fresh simple ingredients such as parsley, egg, lemon juice, garlic, bread and olive oil making it a very refreshing sauce. Put everything in a processor, whiz and.. easy peasy your sauce will be ready in no time. I particularly love the taste of the lemon juice in it and you can add the zest as well if you like.
I have used the sauce as a dip for raw vegetables and had it as an appetizer with olives and some cheese too. It will last for at least a week in the fridge covered with a layer of olive oil.
I have been doing so much cooking recently. Today my kitchen resembled a battlefield and I almost tripped on the cat who is always looking for something better to eat! Typical cat.

Put the egg in a sauce pan, cover it with cold water by 1 cm and boil it for 8 minutes. Cool the egg under cold running water from the tap for 1 minute, let it sit in the water for 2 minutes then peel it.
Wash the parsley and dry it well with a kitchen towel.
Soak the bread in water then squeeze it well to remove as much water as possible. Squeeze the lemon and sieve to remove any pips.
Put the parsley in a processor, with the egg, the bread, the garlic cloves peeled, salt and pepper, lemon juice and finally the olive oil.
Whiz intermittently to avoid overheating and therefore oxidating the parsley (oxidation will make it loose its bright green colour).
And voila' your salsa verde is ready! Store it in the fridge covered with olive oil or simply freeze it.
This can be served as a dip during an antipasto with raw vegetables and olives.
