Last minute speedy pizza in a pan – just 5 min prep!

Pizza ready in a few minutes, no proving and no kneading, is it actually possible?
This is yet another crazy recipe trending on the web which I put to the test.
In a few minutes and with just a few ingredients I created a tasty snack that the children went mad about. Clearly this is not a real pizza but the end result was pretty good.
The trick to cook pizza in a pan is to put the lid on (a perfectly fitting one for your pan) for the first 10 minutes. This will recreate the conditions of an oven and make the dough puff up.
You need to cook your pizza at a very gentle heat and after a few minutes gently shake the pan every now and then to avoid the pastry sticking to the bottom or getting burned. You need a non-stick pan and for best results a thicked bottom one.
My pizza topping was a simple margherita but of course you can put olives, ham, salami or anything else you fancy on top.

Ingredients
- self raising flour - 170 g - 1 + ½ cup
- lukewarm water - 150 ml - 5 fl oz
- salt - pinch
- extra virgin olive oil - 2 tbsp
- For the topping:
- tomato sauce - 3 tbsp
- shredded mozzarella cheese - 50 g - slightly less than 1/2 cup
- fresh basil leaves - small handful
- olive oil
- dried oregano (optional)
Instructions
Grease a pan measuring approx 25 cm or 11 inch then add the self raising flour, the lukewarm water, the salt and the olive oil. Mix well and spread it evenly on the pan using a spoon. The mixture will be wet and sticky. Spread the tomato sauce on top.
Put the lid on and cook over a gentle heat for 10 minutes. Do not lift the lid during the first 10 minutes and make sure the heat is low or the dough will burn.
After this time sprinkle the mozzarella on top, the dried oregano, the basil leaves and a little olive oil. Continue cooking without the lid on for a further 5 minutes. Lift your pizza or shake the pan from time to time to avoid it getting burned.
Enjoy warm.
