Yesterday I was in central London to give a food demonstration at the Icetank Kitchen.
This event was part of the “Organic September” created by the Soil Association in order to promote organic food.
There were several food bloggers presenting their quick and easy recipes and all the ingredients used were organic. It has been a great experience for me and I really enjoyed cooking in front of an audience although I must admit I was quite nervous to start with.
My recipe was a healthier and lighter version of the classic Tiramisu’. This is a truly speedy one you can make at the last minute and you will be surprised how delicious it will be even without eggs and mascarpone which I substituted with ricotta cheese and Greek yogurt.
I am sharing the recipe here today and if you decide to try it let me know what you think. Any tips or suggestions are really welcome.
- Prep Time : 20 minutes
Make the coffee and let it cool down in a bowl or into a shallow dish.
In another larger bowl put the ricotta, the Greek yogurt, the powdered sugar and the vanilla essence. With an electric mixer whip the ingredients until soft and smooth.
Grate 2 tbsp of chocolate and add it to the mixture. Mix well.
Now we can start assembling our tiramisu'. Get a serving dish ready.
Dip the biscuits in the coffee, a few at a time. Soak them for a few seconds without making them too soggy and line 4 up on a plate.
Continue making more layers until the ingredients are finished. Finish with a creamy layer.
Level it well with a a spoon or knife and dust with cocoa powder.
Shave the remaining chocolate with a knife and sprinkle it on your tiramisu' for extra luxury!
Store in the fridge.
