Mozzarella and ham eggplant sandwich

Do you know how to lose weight quickly? Well, walk, walk and keep walking!
I am not keen on going to the gym so recently I decided to walk instead of using the car to go everywhere. I have seen results very quickly!
Having said that I have just come back soaking wet walking back in the rain from the top of the town. Well.. you need to stick to your new year resolutions, don't you?!
As long as you eat healthy, forget about crisps and chocolate and salty ready meals that's enough to lead a healthy life and you will see your weight shifting gently and naturally.
And after talking about losing weight I am giving you a treat today. This eggplant sandwich make a delicious starter or a very tasty snack. I have fried the eggplants but if you prefer a lighter version you can make up your sandwiches, coat them in breadcrumbs, line them up on your baking tray, drizzle them with olive oil and pop them in the oven at 200 C/ 392 Fย for 15 minutes.
Tomorrow I have a birthday party to go to. My hubby' s uncle is reaching the grand age of 80 so it will be a big party indeed.

- Prep Time : 20 minutes
- Cook Time : 10 minutes
Ingredients
- eggplant - 2
- eggs - 2
- mozzarella or other cheese of your choice - 230 g / 2 cups
- ham - 130 g / 7/8 cup
- flour - to coat
- breadcrumbs - to coat
- salt
- oil for frying
Instructions
Slice the eggplant o.5 cm or 0.19 inch thick and sprinkle them with salt. Let them rest for 15 minutes so they will release the water. Pat with kitchen paper to absorb the excess moisture.
Take a slice of eggplant then put a slice of ham on it, a slice of mozzarella and finally cover up with another slice of eggplant. Press well then coat with flour, dip into the whipped eggs and roll in breadcrumbs.
Heat the oil and fry the sandwiches for a few minutes each side until they look nice and golden.
Serve warm with salad.

Wow, two of my favorite ingredients..eggplant and mozzarella. These mozzarella and ham-eggplant sandwiches are delicious looking and reminds me of a grilled cheese sandwich without the bread. Love this…the cheese must melt inbetween the eggplant and the ham…yummy for sure. I am going to try this. I think everyone would love them. Yum! These look divine!!! And yes….I need to drop a few pounds gained from the holidays, but I think it is gonna take a little more than walking and cutting out the chocolate. ๐

These are adorable! I know what you mean about the weight loss thing. It’s all a balancing act – energy in vs energy out, and it’s not easy! These were fabulous and easier than I first thought. I sneaked in a basil leaf and baked them in the oven. Between the two of us we scoffed the lot. There is only one left for a snackette tomorrow – I think they’ll be a scrum in the kitchen to get it! Xxx

I tried but the eggplant , they were raw, 2 minutes each side is not enough , do I have to cook the aubergine before
It depends how thick you have cut the eggplant. It will take a few minutes each side (I didn’t specify how long because it depends on thickness).Generally they are ready when they look soft and golden. You can also cook them before if the slices are quite thick.
