How about having a meat free day? Lots of people have meat every day. Recently we heard on the news that eating too much red meat could be worse than we actually used to think. It is excellent in small quantities but could be unhealthy if we gorge on it too much.
Certainly the thought of a thick juicy steak cooking in a pan makes my mouth begin to water... it is just too damn good! I usually limit red meat to once a week and have another day of white meat instead (usually chicken like most people), than is fish, eggs, cheese and pulses the other days of the week.
In the Italian cuisine it is easy to find meat free dishes. There are plenty of pasta and rice dishes which are delicious without adding any meat to it. For instance adding aubergines to pasta makes the dish ever so tasty you begin to think it is even better than meat.
Anyway last night I fed my family pasta with this sauce which I made in 40 minutes. As I had the approval of my children that was tasty, I decided to post it. So here you are:
- Prep Time : 25 minutes
- Cook Time : 40 minutes
Chop the onion and all the other vegetables finely. In a pan stir fry them with a couple of tbsp of olive oil for about 10 minutes.
Add the tomato passata and the tomato concentrated, salt and pepper and cook on a low heat for about 30 minutes. Add 3 tbsp of olive oil.
Cook the pasta al dente in salty water and add the sauce to it.
Sprinkle with grated Parmesan.
