Peach, Parma ham and cheese bruschetta

Today I have a very simple recipe. Ever thought of having peaches with parma ham? Well.. it works.
You can make this into a quick bruschetta and have it as a snack or as a light lunch. The sweetness of the peaches and the saltiness of the ham combined with cream cheese works very well. This bruschetta just melts in your mouth.
For this recipe you can use plain and ordinary soft cheese or goats cheese if you prefer. A light sprinkle of balsamic vinegar will give this bruschetta the final touch.

Ingredients
- good quality bread - 4 slices
- soft cheese - 100 g - 1/2 cup
- parma ham - 4 slices
- chopped chives - 1 tbsp
- basil leaves - a few
- fresh peach - 1
- olive oil
- freshly ground pepper - to sprinkle
- balsamic vinegar - (optional)
Instructions
Heat a griddle pan and when it is very hot put the bread slices on it and press well with at spatula for a couple of minutes. Turn the slices on the other side and do the same.
Mix the cheese with the chives. Slice the peaches.
Spread the cheese on each slice of bread, lay the peaches on the cheese and then a slice of ham. Drizzle with olive oil, a grind of pepper and a touch of balsamic vinegar if you like.
Decorate with basil leaves.
