Peach Tiramisu with white chocolate

Say Tiramisu' and my mouth begins to water straight away.
The only problem is that not everyone likes coffee and some people cannot even drink it, like children or people who are particularly sensitive to caffeine.
When it comes to desserts summer is that time of year when people prefer something fresher and fruit is always a great favourite.
In Italy it is very popular a summer version of tiramisu' made with peaches with a topping of white chocolate which seems to combine very well with the sweetness of the fruit.
It really is a lovely dessert. I made this for my friend's birthday and it went down really well. And it is easy and quick to prepare. Who wants to spend ages in the kitchen when the weather is so nice outside!
- Prep Time : 25 minutes
Ingredients
- peaches - 6
- mascarpone cheese - 500 g
- eggs - 5 (very fresh)
- sugar - 6 tbsp
- fruit juice - to dip
- savoiardi biscuits - 400 g
- white chocolate - 100 g
- chopped toasted hazelnuts - 4 tbsp (optional)
Instructions
Peel the peaches, remove the stone and slice them. Whip the egg whites until firm
Whip the egg yolks with the sugar until pale and creamy
Dip the savoiardi biscuits into the fruit juice and line them up into your serving dish
Stir gently the egg yolks into the whites, add the mascarpone cheese and stir the ingredients well. Spread some of the mixture over the biscuits
Put a layer of sliced peaches on top
And make another layer with biscuits, the creamy mixture and peaches
On your chopping board chop the white chocolate and put it over the last layer of peaches with toasted hazelnuts. Store in the fridge until serving time.

what kind of fruit juice do I use ?
I have used orange juice which seems to go well with peach but you can use any juice you like.
