Peppers Bruschetta with pinenuts

Put some colours in your food! If there is something I can always have is a bruschetta. You can let your fantasy run wild here and make bruschetta with anything you like. The basics are some rustic bread and good quality olive oil then whatever you put on top of it it's up to you.
My favourite is the classic with fresh tomatoes and basil; this is an easy way to make a tasty starter without working too hard.
Today I made this peppers and pinenuts bruschetta which we had as a starter in the garden under a large umbrella to protect us from the sun; after 7 years of miserable weather now it is really hot! And we all love it!
- Prep Time : 35 minutes
- Cook Time : 10 minutes
Ingredients
- peppers of different colours - 3
- olive oil
- salt
- garlic clove - 1
- basil leaves - a few
- pinenuts - 2 tbsp
- rustic bread
Instructions
Wash the peppers, remove the stems and seeds and cut each of them into 4 halves
Heat a griddle pan until very hot. Place the peppers over it until the skin blisters and the peppers soften. This might take 10 minutes
Lovely colours but also the wonderful flavours of summer!
