Pineapple Sponge Cake – Easy Recipe

It feels good to treat yourself with a good piece of homemade cake from time to time... if you find the time to bake it!
That's why quick and easy recipes always come in handy. And this is one of them. Whip the eggs, add all the ingredients, stir, pop your favourite fruit on top and let you oven do the job.
This is also great for children as it is simple, light and healthy too. I have used olive oil instead of butter for a healthier option and the juice and zest of a lemon will give the cake a fresh and aromatic flavour.
- Prep Time : 20 minutes
- Cook Time : 35 minutes
Ingredients
- self raising flour - 200 g - 2 cups
- sugar - 140 g - 5/8 cup
- eggs - 3
- olive oil - 4 tbsp
- lemon zest and juice - 1
- brown sugar - to sprinkle
- pineapple - 1 fresh (or canned)
- milk - as needed
Instructions
Whip the eggs with the sugar. Add the flour, oil and lemon zest and juice
Add enough milk to make a smooth and creamy mixture
Pour the mixture in a greased baking tray and lay the pineapple on it. Sprinkle with brown sugar.
Cook at 180C or 350F for 35 minutes until golden. I have sprinkled the cake with freezed dried raspberries but this is optional.

Dear Alida, I think this recipe is wonderful. The finished cake looks so pretty and must be yummy for sure. I love the way you placed the pineapple on the top of the cake.
