Plaice fillets Sorrento style (alla sorrentina)

There are many ways you can cook plaice. I often pan fry it especially if I don't have much time on my hands but certainly one of the most tasty ways I know is to serve it the "Sorrento style" or "alla sorrentina".
You don't need to be an experienced cook to make this dish. You first pan fry the fillets for a couple of minutes, then you add chopped tomatoes and black olives. A drizzle of olive oil and you will have a meal fit for a king in just 10 minutes! And then you can't even complain you don't have enough time to cook! ๐

Chop the parsley, the garlic and the anchovy fillet then stir fry them with 3 tbsp of olive oil in a pan for a minute (make sure you don't burn the garlic!)
Coat the fish fillets with the flour, shake them to remove any excess flour then add them to the pan. Stir fry them on both sides for a couple of minutes
Add the tomatoes and the olives over the fish and add salt and pepper. Cover with the lid and cook for 5 minutes
Serve with a sprinkle of olive oil, a green salad and rustic bread.
