Plaice with almonds and zucchini, light and easy

Here we are, back after the Easter festivities! How much chocolate eggs have you still got left? I have a box full of it which weighs 3 Kg! (Italian chocolate eggs are very big) and lots is dark chocolate which is ideal for baking. And this is what I will use it for.
For a while no more chocolate though, what we need now is a light and healthy meal after the chocolate-binge weekend.
I cooked plaice with courgettes for lunch today; a meal which is ready in just 20 minutes. It is very light (as fish always is) and easy to prepare. I have served it with zucchini which I stirred fried and cooked quickly in a pan with a handful of almonds for a touch of crispiness.

Ingredients
- whole plaice - 4
- courgettes (zucchini) - 4
- flaked almonds - 2 tbsp
- salt and pepper
- olive oil - 4 tbsp
- mint leaves - 10
- garlic - 1 clove
- lemon juice
Instructions
Wash and chop the zucchini into small cubes. Cut the garlic into halves and stir fry it in a pan with 2 tbsp of olive oil. Make sure you don't burn it, it should be just lightly golden.
Add the zucchini, salt and pepper and mint and cook for about 12-15 minutes, stirring often, until soft. Add some hot water if it gets dry. In the last 2 minutes add the flaked almonds too.
Now prepare the plaice. Clean it, gut it and rinse it under the tap. Line it over a baking paper on a baking tray, sprinkle some salt over it and drizzle with 2 tbsp of olive oil. Cook for 20 minutes in a hot oven at 180C.
Squeeze a little lemon juice over the fish and serve it with the courgettes.
