Plum tart recipe

Today I washed and put away all my summer clothes. Over here in the UK it feels like late autumn. It is cold, dark and raining on and off.
What a stark contrast to a few days ago struggling to breath under the scorching Italian sun!
So I am back to wearing jumpers, long trousers and socks again and that feels odd. Normally early September is still quite nice. Having said that it is good to be back to the comforts of my own home. Home sweet home as they say.
To welcome us all back I made a nice plum tart. Plums are in season now in the UK. We had it after dinner and it was a real treat. Plums are so deliciously sweet. Choose different types of different colours to create a nice contrast.
- Prep Time : 40 minutes
- Cook Time : 45 minutes
Ingredients
- fresh plums - 12
- flour - 300 g - 3 cups
- vanilla essence - 1tsp
- eggs - 2
- butter - 150 g - 2/3 cup
- sugar - 4 tbsp
- brown sugar - to sprinkle
- pinenuts - 2 tbsp
- jam (of your choice) - 2 tbsp
Instructions
Put the flour, butter, vanilla essence, eggs and 4 tbsp of sugar on your work top.
Working with your hands quickly combine the ingredients and form a ball. Let it rest for 30 minutes wrapped in cling film. Grease a round baking tray (diameter about 30 cm or 12 inch). Dust your work top with flour and with a rolling pin roll out the pastry (about 4 mm - 0.16 inch thick) and put it on your baking tray.
Spread the jam on the pastry.
Cut the plums in half and remove the stones. Arrange them over the jam alternating the colours.
Sprinkle the pinenuts on top and the brown sugar. Cook for 45 minutes at 180C or 350F.

I saw this on Twitter earlier and thought how amazingly beautiful it was…. the colour of the plums and the variation between them are stunning. Such a simple tart, yet it works perfectly and is so seasonal!
I do hate when the weather starts to turn cold and we have to start wearing layers again. But the flip-side is the abundance of produce available right now I guess….
You are right, there is always a positive side to everything and like you, I do enjoy the produce we get. I am into corn, plums and pumpkins at the moment. Just so tasty!

I am getting on the first plane I can and I am coming to eat some of that tart, hope that you have some saved…You amaze me dear friend..another fabulous recipe from your kitchen. How simple and it looks so awesome. Love the colors of the plums and that jam with the pine nuts are such an appetizing treat to have a slice with a warm cup of tea. I can’t believe how different the weather is from Italy to the UK. Still very hot here in the states and it is going to be a warm fall they are forecasting.
