Quick fig, ham and cheese pie

Craving for something tasty? Let's use figs, they are is season now and this year they are super delicious.
After almost dismantelling my dad's fig tree, now back to England and still craving for those irresistible sweet little things, I had to buy some from the supermarket. I saw them and fell into temptation.
You will love this pie, it is easy, moreish and you will make it in no time.
All you need is a sheet of puff pastry, figs, ham and cheese. Use any cheese you like. I favoured Parmesan but soft cheese, like goats or gorgonzola would also go very well.
A drizzle of honey will finish off your creation making it more shiny, beautiful and extra moreish too!
- Prep Time : 15 minutes
- Cook Time : 20 minutes
Ingredients
- puff pastry - 1 sheet
- figs - 5
- parma ham - 10 slices
- cheese (parmesan, cheddar, goats cheese, gorgonzola cheese) - 100 g - 3.5 oz
- honey - to drizzle
- salad leaves (arugola or lamb's ears) - a few
Instructions
Prepare your ingredients: slice the figs and if using hard cheese like Parmesan cut it into small pieces. I took this photo in the dark to make the figs shine and show off their beautiful colour.
Lay the puff pastry on a round baking tray measuring approx 24 cm - 9 inch diameter. Pinch the base with a fork and cook for 10 minutes at 200C or 390F.
Remove from the oven, put the cheese on the tart, the Parma ham slices and the sliced figs. Look at the colour of those figs, I find them simply irresistible.
Brush the figs slices with honey and return to the oven for a further 10 minutes.
Sprinkle a few salad leaves on top. Enjoy warm.

Love figs..my whole family does. It is really hard to find figs here on Long Island, but when you do they are so expensive and very small in size. It is a shame, I would buy them. Hope I can find some on sale and if they look good I buy them once in a while and share with my parents. Your fig, ham and cheese pie is simple and so delightful. What a lovely light dessert. It is the same in the UK. Figs are quite expensive and are considered a delicacy. The problem is that they go off quickly and they are difficult to transport. I am pleased you like the photos x

Figs are so beautiful aren’t they and they work so amazingly well with parma ham. We planted a fig plant in our garden a couple of years ago which we manage to get a handful of figs from each year. Love this recipe!
