Quick mini brioches without sugar – videorecipe

I was pleasantly surprised when I tasted these pastries. I mixed self raising flour, butter and yogurt and the end result was a soft and buttery pastry without any sugar at all. This is because the yogurt makes it soft and moist and it adds to the flavour. Also if you add 2 tsp of any essence you like (I chose vanilla and orange) you will get a delicate and fruity taste without any need for sugar.
You can fill your pastries with jam or chocolate spread too if you wish.
These are incredibly quick: it only took me 20 minutes to prepare them and then I just pop them for 15 minutes in the oven.
You can swap butter for olive or sunflour oil if you like but you will need to add a little bit more flour.

Ingredients
- self raising flour - 250 g - just over 2 cups + extra if needed
- butter - 150 g - slightly less than ⅔ cup
- yogurt - 120 g - 1/2 cup
- vanilla essence - 1 tsp
- orange essence - 1 tsp
- jam or chocolate spread (optional) - for the filling
Instructions
In a bowl mix the flour with the cold melted butter and the yogurt. Add the vanilla and orange essence and mix well.
Working with your hands form a smooth ball. Add extra flour if needed. The pastry should not be sticky.
Sprinkle a little flour on your worktop then roll the pastry (less than 4 mm or 0.15 inch thick) and form a circle. Cut it into 8 triangles, make a small cut at the bottom of each triangle and roll them up. Before rolling them you can add jam or chocolate spread if you like.
Line them up on a baking tray lined with parchment paper and bake at 180C or 350F for approximately 15 min or until golden.

Hi Gina, the recipe makes about 10 cakes. Because they are quite soft and moist they will last well for 4 to 5 days stored in an air tight container.
