Quick strawberry yogurt and cream dessert

It's hot over here and it feels just so good!
I am always in desperate need of vitamin D. Growing up in Italy, I had to make some adjustments to my lifestyle when I moved to the UK as there is considerably less light over here and less hours of sunshine too. Still, there are so many things I love about this country and the people over here! What I do, I top up on sunshine when I am in Italy in the summer.
Before I head off into town to buy a few bits and pieces I wanted to post this quick recipe with strawberries, cream and yogurt. Very simple and great if you want an easy dessert this weekend. Enjoy summer!

Ingredients
- fresh strawberries - 600 g - 3 cups + extra to garnish
- whipping cream - 300 ml - 10 fluid oz
- mint leaves - 4
- greek yogurt - 200 g - 7/8 cup
- vanilla essence - 1 tsp
- sugar - 4 tbsp
- orange - the juice of half
Instructions
Wash the strawberries, remove the stems and slice them into quarters.
Put them in a sauce pan with 2 tbsp of sugar and the juice of the orange and the torn mint leaves. Bring to the boil and simmer for 10 minutes then let it cool down.
Whip the cream, add the greek yogurt, 2 tbsp of sugar and the vanilla, mix well.
In a glass make layers with the strawberries, the cream and yogurt mixture and then strawberries again.
Finish off with some of the strawberry juice and garnish with fresh strawberries.
It starts to feel like summer over here too. This is a light and beautiful dessert, perfect! Have a great weekend, Alida.
