Simple apple flan with olive oil – under 140 calories

I want to eat cakes without any guilt.. this is the time of year when everyone frenetically hits the gym working hard to loose those extra pounds (which by the way help us keep warm in winter!). Clothing shops stock up on gym gear, diet companies make stacks of money selling to you their magic pill to make you loose weight (as they assume you are not capable of doing it yourself). This is the punishment for over indulging at Christmas time. Oh yes let's all loose weight all together like a big club so those commercial giants can become fat and rich.
By the time February comes we all begin the descent to the chocolate wagon, ready to indulge and to live again.
Sorry guys, this is the time of year when we we all desperately need a pick-me up. It's freezing out there, my fingertips are frozen as I type, I have at least 5 layers on, big thick wolly socks but I am still cold and yes I do have central heating.
If you feel you are overweight all you need to do in my opinion is to have confidence in yourself that you can do it without any punishing regimes. Even if you diet you need to enjoy your food or it won't last. You need proper meals 3 times a day plus healthy snacking in between and nothing happens overnight. The longer it will take you to loose weight the more you can be confident that the weight you have lost won't come back in vengeance as soon as you stop your diet.
I could keep going on forever but I will stop here.... I am sure you got my point.
I will just leave you with this apple flan which is very light as it is made with lots of apples and a minimum amount of flour to bind it together. Something healthy and a little sweet made with olive oil to enjoy and feel good about 🙂
- Prep Time : 20 minutes
- Cook Time : 30 minutes
Ingredients
- eating apples - 1 Kg - about 7 small apples ( or 8 cups chopped apples)
- flour - 70 g - just over ½ cup
- cinnamon - 1 tsp
- olive oil - 20 ml - 0.7 fl oz
- brown sugar - 50 g - 1/4 cup
- eggs - 2
- milk - 100 ml - 3.4 fl oz
Instructions
Choose sweet eating apples for this cake.
Peel them and thinly slice them
Whip the eggs (which should have been kept at room temperature) with the sugar until nice and creamy. Add the sifted flour, the cinnamon, the olive oil and the milk. Continue whipping until all the ingredients are well combined together.
Add the apples and mix well.
Grease and flour a round spring baking tin measuring approx 20cm or 8 inch. You can lay a sheet of parchment paper at the bottom of the tin; this will make it easier to remove the cake later. Put the apple mixture in the mold and level it well with the back of a spoon.
Bake for 30 minutes at 200C or 390F. Let the cake cool down completely before removing it from the mold.
When it is cooked leave it in the switched off oven for 10 minutes with the door left adjar.
Sprinkle with powdered sugar if you wish.
It looks like a simple yet very delicious apple cake!
