Simple Chicken and Spinach Patties for a tasty dinner

Many times industries have good meals ideas: they produce interesting dishes but often just because they are mass produced and made with cheap ingredients they can often be disappointing.
This is why you see many people these days attempting the same meals at home.
These spinach and chicken patties are made industrially in Italy and have proven to be very popular. Parents like to give them to their children because they "hide" all the goodness of the spinach inside. All you need is chicken breast, spinach and little parmesan. They are delicious as they are also coated in golden breadcrumbs. A good easy and tasty dinner that my children (and husband) wolfed down in a few minutes!
- Prep Time : 25 minutes
- Cook Time : 10 minutes
- Yield : 8
Ingredients
- chicken breast - 250 g - 2 cups
- spinach - 150 g - 2/3 cup
- grated Parmesan or Pecorino cheese - 5 tbsp
- egg - 1
- breadcrumbs - to coat
- corn or sunflower oil
- grated nutmeg - the tip of a tsp
Instructions
Steam the spinach then squeeze them well to remove as much water as possible. Cut the chicken in pieces. Put them in a food processor with the parmesan cheese, a sprinkle of nutmeg, salt and pepper. Reduce into a puree.
On a plate whisk the egg lightly with a fork and place the breadcrumbs on another plate.
Make your patties with the spinach and chicken mixture. It will feel quite sticky, help yourself with a spoon and add some breadcrumbs if needed. Roll the patties into the breadcrumbs then in the egg and then again in the breadcrumbs.
Heat up some oil in a pan and cook them for about 2 minutes each side or until golden. Serve warm.

Stupid question, but is the chicken raw or precooked when it goes into the food processor? It looks raw in the picture, but I feel like 2 minutes per side wouldn’t be long enough to cook them through…

The chicken is raw. My patties were quite thin so they cooked quite quickly. It is about 2 or 3 min per side but it depends on thickness. Cook them until they are nice and golden to make sure the chicken is cooked through.

Oh dear! Me again! I made these last night and they were so easy and delish! I had no bread so used a packet of sage and onion stuffing mix (free with my Xmas turkey – I always make my own stuffings) to coat the patties. I think I overlooked them a tad and will stick to the original recipe in future. I thought they might make a nice change to a tuck box or picnic if I make smaller ones – I’m sure they will taste just as good cold. Love Sxxx
