Simple filo pastry and apple dessert

Today I'd like to share this very simple recipe, one of those ones which don't need much time to put together.

Layers of crunchy filo pastry sheets with apples and spices to be enjoyed with good quality ice cream or cream. It only takes 15 minutes to prepare!

If you want to enrich this dessert you can add sultanas and/or dried fruit if you like so it will be more like a strudel. My sister is married to a Slovenian and she often prepares this; the texture is so light and crunchy I always have to reach for another slice!

  • Prep Time : 15 minutes
  • Cook Time : 40 minutes



Peel and slice the apples finely; wash the lemon and dry it with a clean cloth. Grate the zest and squeeze half of the lemon juice and add it to the apples with the cinnamon, nutmeg, vanilla essence and 5 tbsp of sugar. Melt the butter in the microwave or over a gentle source of heat. Lay four layers of filo sheets on a baking tray over a sheet of baking paper and brush each of them with the melted butter.

Apple Pie with Filo Pastry

Continue with another layer of pastry and apples and finish off with the remaining four pastry sheets always brushing each sheet with butter. Spread some butter on the last sheet and sprinkle brown sugar on it. Bake for 35-40 minutes at 190C. The pastry needs to look nice and golden.

Dust with icing sugar if you like and serve with vanilla ice cream or whipped cream.

    Dear Alida,
    So simple and I am sure it is so very delicious. Love apples and pastry. Very delicate with the Filo pastry. I think it is the butter that makes it so delicate and crunchy. You always have to keep those sheets wet or they will dry up and it will be hard to work with. I learned that the hard way a long time ago. A beautiful dessert makes you think that you are in Italy or France when you take a bit of this fabulous dessert! Thank you for sharing such wonderful recipes. Have a great rest of the week…

    Can this be prepared a day ahead and kept in the refrigirator or freezer please?

      I think if you prepare it in advance, put it in the fridge (if it is to be consumed the day after) and then cook it on the day you want to eat it it will be OK. In this way the filo pastry will still be nice and crunchy.
