Simple Pumpkin Cookies Recipe

You know when you drop at someone's for coffee and they present you with beautifully homemade biscuits you never forget?
After tasting my friend Frankie's gorgeous melt in your mouth pumpkin biscuits I was determined to make them at home with my children. These dead-easy cookies are soft, light and with a fabulous spiced fragrance. What I love most about this recipe is that you can make the cookies mixture in advance and store it in the fridge, then you can bake them (and they only take about 12 minutes to cook) whenever you like. The mixture can last up to a week in the fridge.
So if you are expecting good friends (like myself..lol) to drop in for coffee or if the urge for something sweet gets overwhelming, you can have freshly baked cookies ready in minutes!
These biscuits have been made entirely by my children (under supervision of course). They are simple and delicious, certainly a must-keep recipe.
- Prep Time : 20 minutes
- Cook Time : 12 minutes
Ingredients
- self raising flour - 250 g
- butter - 100 g
- brown sugar - 150 g
- cooked pumpkin - 200 g
- eggs - 2
- cinnamon - 1 tsp
- nutmeg - 1/2 tsp
- ginger - 1/2 tsp freshly grated
- vanilla essence - 1 tsp
- salt - a pinch
- For the topping:
- philadelphia cheese - 200 g
- butter - 40 g
- vanilla essence - 1 tsp
- icing sugar - 70 g
Instructions
Whip the eggs with the sugar, add the vanilla essence, the salt, the cinnamon, ginger and the nutmeg. Mix well then add the mashed pumpkin.
Add the sifted flour. You can easily do this with an electric mixer if you prefer.
Scoop some of the mixture with a teaspoon and drop the dough 2 inches apart on a baking paper.
Bake at 180C for 10 to 12 minutes or until tops are set. Make the topping by mixing the philadelphia cheese, with the vanilla, the softened butter and the icing sugar and with a teaspoon or with a piping bag spread on top of each cookie. Sprinkle with cinnamon if you like.

How amazing these biscuits (cookies) look! They are really so easy and look delightful. Your children are good bakers (under direction from the master baker). I bet they love it when they bake or cook. Taking after their mum for sure. What perfect little goodies for this time of year and they are pretty enough to serve for guests as well.
