I have been feeling quite lazy in the last couple of days. I am sure it will be the same for everyone coming back from a holiday. Going back to normal it is like a shock! Blogging is what's cheers me up.
I have loads of washing to do and the house to clean, school uniforms to get ready, children to look after and not much time to cook complicated dishes. So I thought after gorging on cakes and stuffing my face with food in Italy, a nice soup would do us all good.
I make soups on a weekly basis but this is so quick: carrots, courgettes, potatoes and onions.. a whiz and it's done! Just a 10-15 minutes preparation.
Also if you make a few croutons (or "crostini") to go with it, this will be a really satisfying light meal.
