Soft and crumbly lemon biscuits

Yesterday I made good use of some organic lemons I had in the fridge. Organic lemons are more expensive but you can often tell the difference by their strong "lemony" flavour and smell. I buy them exclusively for baking as when you need to use their zest, as well as their juice, washing them won't get rid of the pesticides.Β  If you find them too expensive buy unwaxed lemons instead.

I made these addictive biscuits which are soft and crumbly and with a very aromatic lemony taste. So simple yet so tasty!

  • Prep Time : 30 minutes
  • Cook Time : 15 minutes



Work the butter with the sugar to a creamy consistency. Wash the lemon, grate the zest, squeeze the juice and add it to the mixture. Add the egg, the flour and the cornflour and stir well.

With your hands shape the dough into a roll and let it rest for an hour


Make small balls the size of the walnut

Roll them into the caster sugar and then into icing sugar

Line them up on a baking tray (over a sheet of baking paper) and cook for 180C or 350F for 12 to 15 minutes until slightly golden. They should form cracks on top.

    I don’t buy organic lemons too often mostly because they will spoil so quickly (and I often forget to use them in time!)… But you’re so right – the flavor is better and there are no nasty pesticides to worry about with organic… These cookies look delicious, Alida!

    These were hugely delicious, I did not have organic lemons so added a few drops of lemon essence alongside the ordinary lemon that I did have. I also added a couple of table spoons of chopped mixed peel and although this was not authentic is really added a boot – next time I am going to add frozen blueberries.
