Simple apple cake, soft and moist

These are my favourite types of recipes to make quickly when I have those 20 minutes to spare; So it does not feel like you need to spend ages making something nice whenever you feel like a having a treat.
- Prep Time : 20 minutes
- Cook Time : 40 minutes
Ingredients
- apples - 4
- eggs - 2
- sugar - 120 g - 1/2 cup
- butter - 80 g - 3/8 cup
- self raising flour - 100 g - slightly less than 1 cup
- cinnamon - 1 tsp
- milk - 100 ml - 3 + 1/2 fluid oz
- vanilla essence - 1 tsp
- icing sugar - to sprinkle
Instructions
Peel the apples, remove the core and slice them as thin as you can (you can use a mandolin if you have one).
Make the batter by whipping the eggs with the sugar, then add the vanilla extract, the cinnamon, the melted butter and the sifted flour. Mix well then add the milk.
It will be a watery mixture but that is OK. Add the sliced apples, mix well and pour it on to a greased baking tray. I use a silicone one so I don't need to grease it.
Cook at 180C or 350F for 40 minutes. Check with a toothpick if the cake is cooked. Leave it in the oven for a little longer if needed. Sprinkle with icing sugar.

I just made it – it was delicious! However, the apples at the top burnt really quickly. Is there a way to prevent that?
You could cover the top of the cake with some tinfoil when you see that it starts to burn.
Instead of self rising flour can I use Baking Powder?
Hi Rosanna, yes of course. Just add baking powder to the flour and mix well.
