I never have enough of quick and easy recipes.
My little sis who lives in the same village as mine now, pops in to see me quite often (Yay!) and we have lunch together. This is such a treat for me 🙂
This is what I made for her today: a quick and easy pasta dish with anchovies, garlic, parsley and lots of breadcrumbs for a crunchy bite.
You can add a touch of chilly if you like it spicy or just leave it out if you prefer.
So simple yet so yummy!

In a pan stir fry the garlic cloves with 2 tbsp of olive oil and the chopped chilly pepper and the finely chopped parsley (but leave some aside for decoration); add the anchovies and let them melt as they cook.
Cook the pasta al dente in salty boiling water.
In a pan toast the breadcrumbs with 2 tbsp of olive oil for a few minutes until slightly golden. Keep stirring to prevent them from burning.
Drain the cooked pasta and stir it into the anchovy sauce, add the toasted breadcrumbs, a good drizzle of olive oil, mix well.
Decorate with some parsley leaves and serve.
