Spaghetti with anchovies and crunchy breadcrumbs

Spaghetti with anchovies and crunchy breadcrumbs

I never have enough of quick and easy recipes.

My little sis who lives in the same village as mine now, pops in to see me quite often (Yay!) and we have lunch together. This is such a treat for me 🙂

This is what I made for her today: a quick and easy pasta dish with anchovies, garlic, parsley and lots of breadcrumbs for a crunchy bite.

You can add a touch of chilly if you like it spicy or just leave it out if you prefer.

So simple yet so yummy!

This recipe serves 4.

  • Prep Time : 15 minutes
  • Cook Time : 20 minutes

In a pan stir fry the garlic cloves with 2 tbsp of olive oil and the chopped chilly pepper and the finely chopped parsley (but leave some aside for decoration); add the anchovies and let them melt as they cook.

Cook the pasta al dente in salty boiling water.

In a pan toast the breadcrumbs with 2 tbsp of olive oil for a few minutes until slightly golden. Keep stirring to prevent them from burning.

toasting breadcrumbs

Drain the cooked pasta and stir it into the anchovy sauce, add the toasted breadcrumbs, a good drizzle of olive oil, mix well.

Decorate with some parsley leaves and serve.

My grandmother would always make this spaghetti dish twice a year- on March 19th… Saint Joseph’s Day and on Christmas Eve. The only difference is that she would include walnuts and golden raisins… no anchovies. Looks amazing Alida!

Sounds delicious with walnuts! Spaghetti with breadcrumbs is one of those classic Italian dishes which never goes out of fashion.

I love this dish, it is wonderful. But, ….. it lacks vegetables. And as I love vegetables in any dish I eat, I add steamed broccoli pieces or peas or cauliflower or cavolo nero or Bruxellles sprouts. Yummie! Try it! and you will feel so healthy after eating this dish! Buon appetito!
