Sparkling pomegranate Aperitif alcohol and sugar free

If you are hosting a party at this time of year you can greet your guests with a delicious seasonal pomegranate Aperitif.
Usually I like my Aperitives to have a little alcohol in them, at least for special occasions but I must say this one is so good and so refreshing that an addition of alcohol would simply take away the fantastic flavour of freshly squeezed pomegranate. Mint also adds a vibrant touch to this drink.
- Prep Time : 15 minutes
Ingredients
- pomegranates - 2 large
- sparkling water
- mint leaves - a few
- orange slices - 2
- ice cubes
Instructions
With a knife make an incision on the pomegranates skin and then open the fruits in half.
With the help of a spoon or a fork remove the seeds and put them in a bowl. Make sure you remove the white skin because its taste is rather bitter.
Set aside some for the final decoration.
Use a juicer to extract the juice or if you don't have one you can use a potato ricer. If using this method squeeze only a few seeds at a time otherwise you won't be able to squeeze all the lovely juice out.
Using a mesh strainer, strain the juice and pour it onto two glasses. Add sparkling water, a few ice cubes, mint leaves, orange slices and a few pomegranate seeds.
