Stuffed courgettes with ham and mozzarella

More courgettes folks!
Following my previous marinated courgettes recipe I still had some left over in the fridge so I decided to stuff them this time!
Stuffed courgettes is a classic recipe in the Italian cuisine. You can stuff them with whatever you like. My favourite recipe is with ham and mozzarella. You can use any cheese you like, it does not have to be mozzarella necessarily.
They can make an easy and nutritious lunch especially if combined with some fresh rustic bread and of course a good glass of red wine!
- Prep Time : 40 minutes
- Cook Time : 30 minutes
Ingredients
- large courgettes or zucchini - 4
- ham - 80 g
- grated Parmesan cheese - 2 tbsp
- salt and pepper
- egg - 1
- mozzarella - 1
- olive oil
- water - 1 glass for cooking the courgettes
Instructions
With the help of a teaspoon scoop out the pulp of the courgettes and put half of their content in a bowl
Chop the ham and the mozzarella into small pieces and put them in the bowl with the courgettes pulp
Add the egg, Parmesan, salt and pepper and stir the ingredients together
Stuff the courgettes with the mixture
Sprinkle some breadcrumbs on top and a drizzle of olive oil
Lay a sheet of baking paper on a baking tray. Pour a glass of water over it and line the courgettes on the paper. The water is needed to cook the courgettes and keep them moist. Bake for 30 minutes at 200C until the tops look golden in colour

I had some zucchini for the lunch today too, but just a simple stir-fry with chicken breast. These stuffed zucchini halves look mouthwatering, Alida.
Si un ripieno aiuta molto a “confondere” la zucchina e ad arricchire il suo sapore. Anche ai miei bambini la zucchina non va molto ma fatta cosi si.
