Sweet and sour peppers with capers and olives

Sweet and sour peppers with capers and olives

By 14/02/2012

When I am in Italy during the summer months, I always visit my dad's garden and the first thingย  that catches my eye are those brightly colored peppers which seem to be saying: "pick me up now!". And I do, as soon as they are ripe enough. Just as quickly I have the luxury of handingย  them over to my mother.ย

I can afford to be lazy over there!

I still have my truly, bless her, Italian MAMMA who is dying to cook for me as soon as I land there. This always makes me feel so special and I do appreciate every mouthful of her great cooking. Everything is cooked from scratch and all the vegetables come from her garden.

She will wake up at 7 am just to wash the freshly digged radicchio (an Italian type of salad) ย ready for lunchtime and to prepare all the other vegetables.

As I had 3 peppers waiting in fridge I cooked them just like mamma does!
They are done quite simply in a pan, with some vinegar, olive oil and a bit of sugar, just enough to take the sharpness of the vinegar away. Then you add some capers and olives and...voila'! A very tasty side dish in no time which is even better the day after as the peppers marinate in the vinegar and oil.
They are a very tasty side dish and combine well with meat or fish. I especially like them with chicken or as an appetizer on toasted bread.

  • Prep Time : 20 minutes
  • Cook Time : 30 minutes

Wash the peppers, cut them in half and take the seeds off. Cut them into small stripes.

Chop the onion finely and fry it with the garlic with 2 tbsp of olive oil.
Add the peppers and stir fry them for a couple of minutes. Add the vinegar, sugar, capers and olives, salt and pepper.

Cover the pan with the top and cook on a gentle heat for 20 minutes until the peppers are soft. When cooked add 3 tbsp of olive oil and stir.
