Vegetable Fritters.. so crunchy!

You know the feeling of when, all of a sudden, you feel like having something tasty but you don't know exactly what to have and you don't want something too naughty especially after last months binges.
So here it is a vegetarian treat. I love the crunchiness of these fritters. This is ideal as side dish or as an appetizer. Italians often have a little fried bite with a glass of wine at a restaurant whilst waiting for the main meal. It is an interesting and yummy way to have vegetables.
Make sure you cut the vegetables thin enough so that they won't take too long to cook.
- Prep Time : 30 minutes
- Cook Time : 20 minutes
Ingredients
- courgette - 1
- medium potato - 1
- carrot - 1
- egg - 1
- flour - 2 tbsp
- salt and pepper
- milk - 4 tbsp
- oil for frying
Instructions
Wash the vegetables and chop them into little sticks at julienne
Make a batter by beating the egg with the milk, salt and pepper and the flour. Dip the vegetables into the batter stirring well
Heat 4 tbsp of oil in a pan and make little flat piles with the vegetables with the help of a couple of spoons; cook on both sides for 10 minutes until golden
Serve warm and with a glass of white wine like Pinot Grigio 🙂
