When I served this, at first people thought this was beef. Then when they took a close look they realized it was watermelon.
This is super quick and it makes a very good and light starter for summer. The saltiness of the cheese goes very well with the sweetness of the watermelon and the perfume of the mint gives a delicate aroma to this simple, fresh and light dish.

Slice the watermelon and the fennel into very thin slices.
Peel the orange and slice it into thin slices too.
On a serving dish place the watermelon and the orange slices. Sprinkle with the sliced fennel and the feta cheese cut into cubes. Garnish with mint leaves, drizzle with olive oil and some freshly ground pepper.
