Yogurt and lemon cake….very lemony!

"Rain rain go away, come back another day!" This is what my children have been singing for the last...I would say month! Yes, because we have not been having anything else but rain recently. What is it the Monsoon season or what?!
All my salad in the garden seems to have stopped growing due to the lack of sun so I have to wait longer to taste my precious leaves..
Well to get over a rainy weekend I thought of making this lemon cake with some juicy Italian lemons a friend of mine brought me recently. I have added a small pot of yogurt for extra flavour and there you go, you can soon forget about the weather outside, enjoy this very lemony cake and think about the sunny place where they come from.
- Prep Time : 30 minutes
- Cook Time : 40 minutes
Ingredients
- self raising flour - 300 g - 3 cups
- sugar - 250 g - 1 + 1/8 cup
- butter - 150 g - 2/3 cup
- eggs - 4
- zest and juice of organic lemons - 2
- natural yogurt - 125 g - 1/2 cup
- vanilla essence - 1 tbsp
- salt - a pinch
Instructions
Beat the yolks with 200 g of sugar to a creamy consistency. Add the melted butter (cold), flour, vanilla, lemons and yogurt. Stir well in.
Beat the egg whites with the salt and the remaining sugar until they are very firm and gently add them to the mixture stirring it all in.
Pour the mixture into a round baking tray and cook at 180C for 40 minutes.
You can decorate according to your preferences.
I have sprinkled the cake with icing sugar then sliced a lemon and cooked it for 7 minutes into sugar and water then sprinkled with sugar again, then I put it on the cake.

Lemon is the best flavor for cakes and a compliment to it… this is beautifully done, but of course its from scratch the best is from pure ingredients… pure perfection!

Lemons are happy fruits, they make me smile! Anything that smells like lemons or is made with the lemons makes me happy too, even in the rain! 🙂
Lemon cakes are definitely one of my favourites but I haven't made a yogurt cake for ages – very nice idea.

These lemony cake looks lovely & refreshing! I love to add yogurt in my cakes too & it does gave that lovely moist texture to the cake just like yours! LOVELY & so tasty! Having just said your risotto looked delicious, I'm now going to repeat myself! Your cake looks absolutely delicious. Italian lemons are meant to be the best, so I'm sure they've added an extra something. We can but hope the sun will arrive soon.
